Quick Thousand Island Dressing

Ingredients

150ml mayonnaise
2 tbsp Filippo Berio Sun Dried Tomato Pesto
Juice of half lemon
2 anchovies, finely chopped

Method

Mix all the ingredients together and season to taste. This dressing is great over a crisp green salad or as an accompaniment to poached eggs.
